My love of cauliflower is pretty endless. Here is an easy peasy recipe for cauliflower ranch mashed potatoes. I love the Marzetti’s Simply Dressed collection of dressings; for this recipe, I used their ranch but why not mix it up and try caesar or blue cheese?
- 1 head of cabbage
- 4-5 tablespoons ranch dressing
- 2 tablespoons sour cream
- 1 green onion
- salt + pepper
1. Steam cauliflower in the microwave. Cut cauliflower from its thick stem into smaller florets. Here is a how to cut cauliflower tutorial if you’re wondering. Place these in a microwave safe bowl with 1/4 cup of water. Cover the bowl and microwave for 3-5 minutes.
2. Drain water from steamed cauliflower. Place in a food processor with ranch dressing and sour cream. Blitz until smooth.
3. Remove from the food processor and season with salt + pepper. Thinly slice green onion and place on top of cauliflower potatoes.
To Note: If you want the texture to resemble mashed potatoes even more closely, add 1 can of pre-cooked canned potatoes to the food processor.
