Salt And Vinegar Roasted Potato Bites

The bite from salt and vinegar chips is translated into potato bites in this recipe. The key is letting the potatoes sit in the water-vinegar mixture long enough and giving them a little malt vinegar shower after roasting.

Salt and Vinegar Roasted Potatoes -- With a bit of malt vinegar on top, they are perfection


  • 3 large potatoes
  • 10 cups water
  • 1 cup white vinegar
  • 1 cup malt vinegar
  • non-fat cooking spray
  • sea salt  + pepper


1.  In a large pot, combine water, salt, and both vinegars.  Pierce each potato 5-6 times with a fork.  Bring to a boil and then add in the potatoes.  Boil, uncovered, for 2-3 minutes.  Turn off the heat and let the potatoes sit for in the water-vinegar mixture for 1 hour.

2.  Preheat oven to 400 degrees.

3.  Remove from the water-vinegar mixture.  Cut potatoes into 1-inch pieces.
Put the 1-inch potato pieces in a single layer on a baking sheet.  Spray with non-fat butter cooking spray.  Sprinkle with salt and pepper.

4.  Bake for 35 minutes or until golden brown.  Remove from the oven.  In a large bowl, toss baked potato bites with 2 tablespoons of malt vinegar and salt + pepper to taste.
